I’ll be the first to admit that I’m not a veggie-liking girl. I’ll take any kind of sweets (or protein) over my vegetables. But now that I’m living on my own, and very conscious of staying healthy, I’ve been getting creative in the kitchen by finding recipes that have the health benefits of fresh veggies, but still taste good. Why am I sharing this with you? Because Sunday is “National Eat Your Vegetables Day!”
I know what you’re thinking….ew! (Or for the few very green eaters, maybe you’re thinking this is great!) But let me tell you, besides the fact that my palette has changed, I’ve found some ways to make even asparagus taste good. Here are five vegetable recipes that I’ve personally taste-tested and approved!

I’ve only whipped this one up twice now (and my boyfriend thinks that they taste like vegetables), but I’m starting to enjoy the crunchy outside and soft insides of these. Okra may not be a mainstream vegetable, but this recipe is one of the easiest to prepare and still tastes good a few days later!
