I don’t eat vegetables, that’s a human thing, but these sure look good.  Amanda finds a way to make all different kinds of veggies irresistible for Eat Your Veggies Day (this Sunday).  Eat your veggies this way, and get your HooplaHa!

I’ll be the first to admit that I’m not a veggie-liking girl. I’ll take any kind of sweets (or protein) over my vegetables. But now that I’m living on my own, and very conscious of staying healthy, I’ve been getting creative in the kitchen by finding recipes that have the health benefits of fresh veggies, but still taste good. Why am I sharing this with you? Because Sunday is “National Eat Your Vegetables Day!”

I know what you’re thinking….ew! (Or for the few very green eaters, maybe you’re thinking this is great!) But let me tell you, besides the fact that my palette has changed, I’ve found some ways to make even asparagus taste good. Here are five vegetable recipes that I’ve personally taste-tested and approved!

1. Oven-Baked Spinach Chips

I’ll forewarn you that you’re bound to get these chips stuck in your teeth, but the fact that they taste like green potato chips makes you gobble them up!

2. Crispy Parmesan Asparagus Sticks

As a cheese lover, I know that no matter how much I dislike this vegetable, it’s sure to taste good. This recipe delivers that combination of healthy, yet satisfying.

3. Oven-Fried Okra

I’ve only whipped this one up twice now (and my boyfriend thinks that they taste like vegetables), but I’m starting to enjoy the crunchy outside and soft insides of these. Okra may not be a mainstream vegetable, but this recipe is one of the easiest to prepare and still tastes good a few days later!

4. Pan Roasted Brussel Sprouts

I have to admit, I’m not a fan of brussel sprouts. But the simple flavors and crunch makes eating these as my daily veggies tasty and fun.

5. Cauliflower Poppers

This recipe has been a go-to for when I want a healthy snack. It’s quick to bake, and you can eat them like popcorn while relaxing and reading. They’re even good re-heated!
